Tropical cyclone and Easter and…

And how we are not going to New Caledonia but road tripping instead….

I thought I planned it well and all that. Well, clearly I forgot about the small little tiny tiny tropical cyclone season in the Asia Pacific region. 

So yesterday, we found out that everything just went to shits and we are not flying to New Caledonia or Crackedonia for 8 days of relax, beaching, diving and all that. (We will, thanks to the lovely customer service people… just not now).

What to do…

Road trip. 

Going back a little we slept in the car or a tent on regular basis, Europe and Canada to be more specific.

So there we go, we are on our way to this big rock in the middle of nowhere.. I mean Australia…

Leaving like today, actually now. There’s about 8 days to kill… trip.. drive.. something. 

I am about to document that, with 2 cameras, goPro and my eyes/brains + wordpress.

Ever since I remember I wanted this. Actually, David Attenborough made me want this. 

Now, we are in our fake 4×4 drive packed with a lot of water  (yes David, Ben) starting this little adventure exploring business. 

There’s even this little funny looking machine from back in the past…

Part-time vegetarian …

Let’s be honest, I will never stop eating bacon – never going to happen. Eggs & bacon, bacon sandwich…. I don’t care about chicken, lamb or beef – it’s always about bacon.

On the other hand, I’m trying to be healthy. Considering the fact that I’m a type 1 Diabetic with simply no thyroid – it can be potentially hard.

My plan for now?

I’m not eating meat on week day. On Saturday or Sunday I don’t mind little Sunday roast or a steak though.

I’m getting much more creative with food by doing this.

So here it is, something I’ve never made before and it’s super – delicious.

Courgette Fritters with Tuna Salsa

You will need:

  • 6  courgettes (approx. 750g / little ones)
  • 1 onions (finely chopped)
  • 1 small bunch fresh parsley (chopped)
  • 4 table spoons of wholemeal or coconut flour 
  • salt
  • pepper
  • 1 egg
  • coconut oil or olive oil (for frying)
  • canned tuna
  • chilli flakes
  • canned sweetcorn
  • cucumber
  • lemon
  • 1 table spoon of Greek yogurt


  • Grate the courgettes with either the grating blade in the processor or by hand
  • Squeeze the courgettes in a dish towel to remove excess water
  • Put the chopped onions and an egg in a bowl. Stir in the chopped parsley, add the flour and season well with salt and pepper, mix thoroughly
  • Heat a few tablespoons of oil in a large frying pan and drop heaped dessertspoons of the mixture into the hot oil, flattening the little cakes down with the back of the spoon as you go. Cook these little patties for about 2 minutes each side until golden, and then transfer to a couple of waiting plates
  • For tuna salsa: Mix canned tuna with sweetcorn, add chopped cucumber and a tea spoon of chilli flakes and a table spoon of yogurt. Season to your liking and dress with lemon.

You don’t miss the place, you miss the people

5 months. 5 months in Australia passed 2 day ago.
It hit me, at that moment it got into my head how much I miss the people from back home. Whatever you want to call home, for me it was Manchester, Sheffield, Wroclaw… but I don’t miss the places, I miss the people.
Memories, pictures… thank you my beloved technology and sd cards with tones on pictures that I can go back to, whatsapp and snapchat, skype and freecalls.
And oh, bloody hell I’m such a facebook junkie – what would I do without it …
Being so far away from everything and everyone you know can be daunting and it’s great to have people around you, who you can trust and have fun with (you know I’m on about you, my little bunch).

But yeah, I do miss you guys. From Manchester to Sheffield, from Wroclaw to Lausanne amd other places.

You know this. Xxx

Quote of the day


Someone told me once to stop having so much doubt in myself.
This is very true, it kind of kills you. You could be amazing in what you do but doubt is stopping you when it comes to doing something.
It keeps coming back you know, even if you believe in yourself and you’re confident. It comes back from time to time…
Its good to remind yourself that you do it to achieve something, to get to what you want in life.
What keeps me going is goals. I just need to remember this 🙂

Back to life

After a week and a bit I’m back to reality, my gym reality.
Tonight for the first time after my surgery I went to the gym for the whole 40 minutes.
Did a bit of cardio and a some weights and you know what? I feel so much better already. Not physically but mentally. I needed this, it keeps my head/thoughts in the right place. Oh and the shape, trying to avoid round shape eh…

The challenge is to ‘break the sweat’ everyday for the rest of my life.
Now then, challenge accepted?!

I kinda learned to eat breakfast over years, yeah it took me a while. But now I can’t go without it…
